Ingredients:
2 cups water
½ teasp saffron
1 teasp extra virgin olive oil
2 cups couscous
½ teasp salt
¼ cup raisins
3 Tablesp fresh mint chopped
Method:
- In a saucepan boil 2 cups of water then add saffron.
- Remove from fire, covered and let stand for 30 minutes.
- Return the saucepan to the fire, bring to a boil then add in the olive oil, salt, couscous, and raisins.
- Remove from the heat, cover, and let stand for 30 minutes.
- Garnish with mint then serve.
