Ingredients:
2 cups rice, cook and chilled
1 1/2 green pepper, chopped
50g pimentos, chopped
1/2 onion, chopped
salt and pepper to taste
Dressing:
1/4 cup vinegar
3/4 cup salad oil
1 tsp Dijon mustard
1 tsp chopped parsley
1 tsp chopped chives
Method:
- Mix all the ingredients salad together.
- Mix all the ingredients dressing together.
- Pour dressing over rice.
- Place in pan, press firmly then chill.
- Invert and serve on a plate.
- Garnish with hard boiled eggs, mushrooms or olives.
