Chickpeas salad with diced tomatoes, kalamata olive fresh basil and parsley
Ingredients:
2 x 400g Cans Chickpeas, rinsed and drained
2 Tsp Fresh Lemon Juice
2 Cups Tomatoes, diced
1/2 Cup Kalamata Olives, pitted and sliced
3/4 Cup Red Onion, sliced
5 Tblsp Olive Oil
1/2 Cup Fresh Basil
1/4 Cup Flat Leaf Parsley, finely chopped
Salt and Pepper to taste
