Ingredients:
4 cups peeled cucumbers, sliced
4 cups tomatoes, cut into chunks
1 large capsicum, cut in slices
3 tablesp fresh coriander, loosely chopped
1 cup crumbled feta cheese
1/2 cup pitted kalamata olives
3 tablesp fresh lemon juice
3 tablesp extra virgin olive oil
1/2 teasp salt
1/4 teasp freshly ground black pepper
Method:
- Add the fresh vegetables as described above and place
in a large salad bowl, add olives, feta and herbs.
- Mix the olive oil, vinegar, salt and pepper in a
small bowl pour the dressing over the vegetables when ready to serve then
toss.
